Baked brown sugar bacon is a favorite at our sister brunches and it really is the best bacon you will ever make. It’s super easy and since it is baked you’re not stuck standing at the hot stove getting splashed with grease. You may want to make double the bacon from what you normal do for your family. The sugar caramelizes with the bacon fat and you just can’t stop eating it!
Preheat your oven to 350 degrees. The trick for great bacon is low and slow.
Start with a jelly roll pan (mine is 15 x10) and line with aluminum foil. This will help with clean up later. Then put your cooling rack(s) on the pan’s edges so that the racks are resting above the bottom. Spray the rack lightly with cooking spray otherwise the bacon has a tendency to stick to the rack.
I find it easier to cut the bacon strips in half then lay each piece on the racks making sure to get each piece as close as possible to the next. You don’t want to overlay pieces if possible so that each piece cooks evenly.
Once you have all the bacon laid out on the rack the fun starts. Generously sprinkle the brown sugar over every piece of bacon. You really want to put quite a bit on the bacon. Some will end up on the bottom of the pan but that’s ok. That’s why we lined with foil :-).
After you have all the brown sugar on the bacon put the pan in the preheated oven for 25 minutes. I find I need to rotate the pan after the first 15 minutes to help it cook evenly. Depending on your oven you may need more time. I am at my cottage this week and this oven needed about 10 more minutes. I just watch it the last few minutes and pull the pan out when it reaches a beautiful caramelized brown.
Now the biggest problem you will have it not eating all it before your family has a chance to sit down for breakfast. Although, based on my experience the aroma of bacon in the oven will rouse even the sleepiest family members from their beds!
