Do you love rotisserie chicken??? I do! I used to pick one up from the store for dinner on a busy night. But now I make my own rotisserie chicken in my crockpot!! I love how easy it is, how many things I can do with the chicken, and how good my kitchen smells.
Here is how you do it:
Take aluminum foil and roll into about 8 balls. Put them on the bottom of your crockpot.
Rinse off your whole chicken. Place the chicken breast side up on top of the aluminum foil balls.
Next season the chicken with whatever you want, inside and outside. I like to use seasoning salt and garlic powder. Or you can use whatever you have in your spice cabinet.
Turn crockpot on low.
Now here comes my favorite part……put the cover on and cook for 7-8 hours and do whatever you want (or whatever you need to do!)
While I got to work on my laundry and the rest of my goals for the week, my dinner cooked away. I love that!
There are so many things you can do with this delightful chicken! I like to have it with mashed potatoes and a vegie the first night. Then I usually use it in a second meal for the week or freeze the extra to use another week. Here are some of the things I like to use it for:
You can eat the chicken with some mashed potatoes and vegie.
- Chicken & Barley soup
- Put on top of my salads for lunch
- Put in quesadillas, tacos or burritos
- Make Chicken Paninis or sandwiches
- Put in a casserole or chicken pot pie
- Put on top of pizza (especially bbq chicken pizza!)
- Add to homemade fried rice
- Make chicken salad
