Crockpot Beef Stew

Summer has flown by! I’m so excited for the cooler evenings and the leaves to turn. As school starts this fall, our schedules will be in full swing. Homeschool, volleyball practice, football practice, field trips, and on and on. Dinners will be quick meals; but, fast food isn’t healthy or inexpensive. One of my favorite fall meals is my grandma’s 5 Hour No-Peak Beef Stew. With our schedule, crockpot meals are better for us. I modified her recipe to cook in the crock pot. Here it is:

2 Cups of Carrots

5 Stalks of Celery

1 Onion

4-5 Potatoes cubed

stewed tom

2 1/2 Cups of Stewed Tomatoes

2# Stew Beef

2 tsp Salt

1Tbsp Sugar

4 Tbsp Tapioca

Salt and Pepper to taste

Set Crockpot for 8 hrs on low or 6 hrs on high.
