The gardening seasoning is coming to a close, so we are using up the last of the wonderful zucchini this week. We are still getting a few tomatoes, but they are slowing down. So I am going to use them in one more meal this week, and freeze the rest of them. Then I have them for those wonderful soups, stews and chilis when it is cold outside. I am hoping the weather cooperates for 2 more nights of grilling dinner….you never know is Wisconsin!
Here is what is cooking in my kitchen this week:
Sunday: Salsa Chicken – used in Burrito Bowls
- Monday: Burgers, carrots, peas
- Tuesday: Stew
- Wednesday: Steak, Baked Potates, Zucchini
- Thursday: Chicken Bruschetta Pasta
- Friday: Leftover Buffet or Homemade Pizza
- Saturday: Pork Roast with carrots and potatoes
