I decided to prepare and freeze some meals to be ready to cook on days when we have little time in the evening because of basketball practices and games. Since Friday, I made 10 muffin mixes, 4 cornbread mixes, 40 burritos, 3 Tequila Lime Chicken meals, 3 Teriyaki Chicken meals, 2 batches of crockpot applesauce (3 pints in the freezer from what was left) and about 3 cups of taco seasoning mix.

Leaning Tower of Books
The pile of books on my nightstand is overwhelming and threatening to topple over as the pile keeps growing and growing . In fact, books are starting to take over several areas of my home. Not only is there a pile on my nightstand there is a pile in the guest bedroom, one in the living room and one in the dining room. Our volleyball season will be officially over tonight. We have our end of the season party with food, awards and even a parents vs. players volleyball games. (Pray that I survive without injury!) This week I am keeping the menu very simple. We have things going on every night, so quick and easy is a must! Plus my husband will be out of town for a few days, so I am taking those nights off! Does anyone else take the day off of cooking when their spouse is gone??? I love being in the kitchen, but I also need a little break sometimes. And after a little time away, I am ready to jump back in!
Let’s face it, we all get 24 hours each day to get our stuff done. We talk about “finding” time to do the things that are important to us but we really can’t “find” time or “buy” extra when we go to the grocery store 🙂 .
