Woo-Hoo!! I checked off one thing from my Fall Bucket List! I made dinner in a pumpkin last night. I love this meal; it’s festive and makes me feel autumn-ly. 🙂
It’s also super easy to make. Here is the recipe: (My pictures show that I doubled the recipe.)
Ingredients:
1 medium pumpkin
1 onion, chopped
2 tablespoons vegetable oil
2 lbs ground beef
2 tablespoons soy sauce
2 tablespoon brown sugar
6 oz fresh chopped mushrooms
1 can cream of mushroom soup
1 1/2 cups cooked rice
Directions:
- Start water boiling to cook rice.
Carefully cut off the top of the pumpkin and clean out the pulp and seeds. (I saved the seeds to roast.)
Preheat the oven to 350 degrees. In a large skillet sauté onions in oil until clear.
When water for rice is boiling add rice and cook as directed.
Add meat to onions and brown.
Drain the meat and onions
Add soy sauce, mushrooms, brown sugar and soup.
Simmer for 10 minutes, stirring occasionally
Add cooked rice to meat mixture.
Spoon mixture into pumpkin shell
Replace pumpkin top and place entire pumpkin on a cookie sheet and bake 1 hour until pumpkin is tender.
Put pumpkin on a plate and serve.
Scoop out meat mixture and pumpkin as the vegetable.
We serve it with salt and pepper, extra brown sugar and/or soy sauce.

I definitely what to try that. It look so delicious.
It is very yummy! Two of my children don’t like the pumpkin so they skip that part. It’s also nice that the kids can either add soy sauce to make it more ethnic or brown sugar to make it sweeter. Let us know how it turns out!
